Lactose-free clafoutis recipe
Ingredients for 6 people

500 g fresh cherries (preferably unpitted for extra flavour)

3 eggs
-
80 g cane sugar
-
1 sachet vanilla sugar
-
80 g wheat flour (or rice flour for a gluten-free version)
-
25 cl vegetable drink (almond, oat or rice)
-
10 cl vegetable cream (coconut or soya)
-
1 pinch of salt
-
A little vegetable oil for the mould
Preparation

Preheat oven to 180°C (th. 6).

In a bowl, Whisk the eggs with the sugar and vanilla sugar.

Add the flour and saltMix to a smooth paste.

Pour the plant-based drink then the vegetable creamwhile continuing to whisk.

Lightly oil your tin and arrange the cherries at the bottom.

Pour the mixture over the fruit.

Place in the oven for 35 to 40 minutesCook until the top is golden brown.

Leave to cool before serving... or enjoy it fresh!
